To start things off at Wild Mango’s, The Monster orders up an Ambergis Caye Lime Freeze, coconut rum, lime and pineapple all frozen up and served with the lapping ocean only feet away.
Under the canopy and ringed by trees, this is a perfect place to cool off at lunch or sit under the lights at night and explore the terrific menu of local specialties.
To start, the tres amigos ceviches. Yucateco with shrimp, tomato, onion and lime, the Mazatlan with snapper, cucumber, sliced pickled onion and habanero served with cassava chips and the coconut Thai with grouper, shrimp, coconut water, cucumber, soy and Sriracha with tortilla chips.
While totally different in taste, what they share is fresh fish and abundant flavors. Through on a dash of the ever-present habanero hot sauce and these bites sing. And yes, that is popcorn on ceviche. It’s fantastic.
As for the main dish the baja fish taco wrap with crispy fish, spicy slaw, queso blanco, chipotle tartar proves a winner. Served with a side of pasta in oil, it’s a huge serving and perfect before an afternoon filled with lounging at the beach wiling away the hours. The Monster can get used to this.
